Ingredients

  • 1 cup pumpkin purée
  • 1 cup Gouda cheese, shredded
  • 1 pizza dough (store-bought or homemade)
  • 1 head roasted garlic
  • Fresh herbs (thyme or rosemary)

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of a head of garlic, drizzle with olive oil, and wrap in aluminum foil. Roast for about 30-35 minutes until golden and soft.
  2. Prepare the Dough: Roll out the pizza dough on a floured surface to your desired thickness.
  3. Mix the Pumpkin Base: In a bowl, combine the pumpkin purée, a pinch of salt, and the roasted garlic (squeeze the cloves out of their skins). Blend until smooth.
  4. Assemble the Pizza: Spread the pumpkin mixture evenly over the dough, sprinkle Gouda cheese on top, and add fresh herbs.
  5. Bake: Transfer the pizza to the oven and bake for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
  6. Serve and Enjoy: Let it cool for a couple of minutes, slice, and serve warm.
