Ingredients

  • 2 medium sweet potatoes, roasted and mashed
  • 1 ½ cups all-purpose flour (or almond/coconut flour for gluten-free)
  • 1 tablespoon baking powder
  • 2 eggs
  • 1 cup milk (cow’s, almond, or oat)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt

Instructions

  1. Roast sweet potatoes in the oven at 400°F (200°C) for about 40 minutes until tender. Allow them to cool, then peel and mash.
  2. In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the eggs, milk, mashed sweet potatoes, and maple syrup.
  4. Pour the wet ingredients into the dry mixture. Stir until just combined; avoid overmixing.
  5. Preheat the waffle iron according to manufacturer’s instructions.
  6. Lightly grease the waffle iron and pour batter onto the center, spreading evenly. Cook until golden brown and crispy, about 5 minutes.
  7. Serve immediately with your favorite toppings.

Notes
