Ingredients
- 2 medium sweet potatoes, roasted and mashed
- 1 ½ cups all-purpose flour (or almond/coconut flour for gluten-free)
- 1 tablespoon baking powder
- 2 eggs
- 1 cup milk (cow’s, almond, or oat)
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
Instructions
- Roast sweet potatoes in the oven at 400°F (200°C) for about 40 minutes until tender. Allow them to cool, then peel and mash.
- In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the eggs, milk, mashed sweet potatoes, and maple syrup.
- Pour the wet ingredients into the dry mixture. Stir until just combined; avoid overmixing.
- Preheat the waffle iron according to manufacturer’s instructions.
- Lightly grease the waffle iron and pour batter onto the center, spreading evenly. Cook until golden brown and crispy, about 5 minutes.
- Serve immediately with your favorite toppings.
Notes
Add chopped nuts or dark chocolate chips for extra flavor. If waffles stick, lightly oil or spray the waffle iron before adding batter.
