- 1 cup Fresh Strawberries, chopped
- 2 cups All-Purpose Flour
- 1 cup Unsalted Butter, at room temperature
- 1 ½ cups Granulated Sugar
- 3 large Eggs
- 1 teaspoon Baking Powder
- 2 teaspoons Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan, lining the bottom with parchment paper.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour and baking powder. Gradually add the dry mixture to the wet mixture, blending until just combined.
- Gently fold in the chopped strawberries.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve with whipped cream or fresh strawberries.
