  • Total Time: 85
  • Yield: 10 servings

Ingredients

  • 1 cup Fresh Strawberries, chopped
  • 2 cups All-Purpose Flour
  • 1 cup Unsalted Butter, at room temperature
  • 1 ½ cups Granulated Sugar
  • 3 large Eggs
  • 1 teaspoon Baking Powder
  • 2 teaspoons Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan, lining the bottom with parchment paper.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry mixture to the wet mixture, blending until just combined.
  5. Gently fold in the chopped strawberries.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Slice and serve with whipped cream or fresh strawberries.

Notes

Ensure all ingredients are at room temperature for best results. Don’t over-mix the batter to keep the cake tender.
