Delicious and healthy Peanut Butter Energy Balls that are quick to prepare and perfect for a snack or dessert.

  • Total Time: 40 minutes
  • Yield: 24 servings

Ingredients

  • 1 cup peanut butter (creamy or crunchy)
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups rolled oats
  • Add-ins (chocolate chips, dried fruits, seeds, or nuts)

Instructions

  1. Combine the Base Ingredients: In a large mixing bowl, stir together the peanut butter, honey or maple syrup, and vanilla extract until smooth.
  2. Add Dry Ingredients: Mix in the rolled oats and any optional add-ins (like chocolate chips or nuts). Stir until well combined.
  3. Chill the Mixture: Place the bowl in the refrigerator for about 30 minutes.
  4. Form the Balls: Scoop out about 1 tablespoon of the chilled mixture and roll it in your hands to form a ball.
  5. Store and Enjoy: Place the energy balls in an airtight container in the refrigerator for up to a week or freeze for longer storage.

Notes

If the mixture feels too sticky, add more oats. If it’s too dry, add a splash of water or more peanut butter. Experiment with flavors by adding protein powder or cocoa powder!
