Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add in your pasta and cook until al dente, reserving some pasta water before draining.
- Sauté the Chicken: Heat olive oil over medium heat, season chicken with salt and pepper, then cook until golden brown and fully cooked. Remove and let rest.
- Prepare the Sauce: In the same skillet, add more olive oil and minced garlic, sauté until fragrant. Stir in cooked pasta, chicken, and spinach.
- Make it Creamy: Lower the heat and add parmesan, mixing until melted, adding reserved pasta water if needed for consistency.
- Season and Serve: Adjust seasoning with salt, pepper, and herbs. Serve hot with extra parmesan and herbs.
