Ingredients

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup sugar (for crust)
  • Optional toppings: fresh fruit, chocolate ganache, nuts

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar; stir until it resembles wet sand. Press into the bottom of cupcake liners in a muffin tin.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and vanilla; mix until creamy. Add the egg and mix until just combined.
  4. Spoon the cream cheese mixture over the crust in each muffin cup, filling them about 3/4 full.
  5. Bake for about 20 minutes or until edges are set but centers have a slight jiggle.
  6. Allow to cool, then refrigerate for at least two hours to set properly.

Notes

For best results, allow all ingredients to reach room temperature before mixing. Avoid overbaking to prevent cracks.
