Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 tablespoon oil
  • Green onions or sesame seeds for garnish (optional)

Instructions

  1. In a bowl, combine chicken pieces with soy sauce, black pepper, and minced garlic. Marinate for at least 30 minutes.
  2. In a large skillet, heat oil over medium-high heat. Add chopped bell peppers and sauté for about 2 minutes until softened. Remove and set aside.
  3. In the same skillet, add more oil if needed. Cook marinated chicken until golden brown and fully cooked, around 5-7 minutes.
  4. Add sautéed vegetables back into the skillet, drizzle with remaining soy sauce, and stir to combine. Cook for another minute.
  5. Garnish with green onions or sesame seeds if desired and serve.

Notes

For extra heat, consider adding red pepper flakes or fresh chili peppers. For a vegetarian version, substitute chicken with tofu or tempeh.
