A comforting and moist chocolate chip pumpkin bread, infused with warm spices and rich chocolate, perfect for autumn gatherings.

  • Total Time: 85 minutes
  • Yield: 8 servings

Ingredients

  • 1 cup pumpkin puree (fresh or canned)
  • 1 cup brown sugar
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it lightly or lining it with parchment paper.
  2. In a large bowl, combine pumpkin puree, brown sugar, and vegetable oil. Whisk until smooth, then incorporate the eggs and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  5. Pour the batter into the prepared loaf pan, spreading it evenly.
  6. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. If the top begins to brown too quickly, tent it with aluminum foil.
  7. Once baked, let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added moisture, consider using Greek yogurt instead of oil or swap in whole wheat flour for a healthier twist. Letting the bread rest overnight enhances flavor.
