Instructions
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it lightly or lining it with parchment paper.
- In a large bowl, combine pumpkin puree, brown sugar, and vegetable oil. Whisk until smooth, then incorporate the eggs and vanilla extract.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. If the top begins to brown too quickly, tent it with aluminum foil.
- Once baked, let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For added moisture, consider using Greek yogurt instead of oil or swap in whole wheat flour for a healthier twist. Letting the bread rest overnight enhances flavor.
