Ingredients

  • 1 lb Boneless, skinless chicken breast, cooked and shredded
  • 4 Tortillas (flour or whole wheat)
  • 2 cups Shredded cheese (cheddar, mozzarella, or a blend)
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves Garlic, minced
  • 1 tsp Paprika
  • 1 tsp Cumin
  • Salt and pepper to taste
  • 2 tbsp Olive oil

Instructions

  1. In a skillet over medium heat, add olive oil. Sauté sliced bell peppers and onion until tender, about 5-7 minutes. Add minced garlic and stir for another minute.
  2. In a bowl, mix shredded chicken with paprika, cumin, and season with salt.
  3. Warm each tortilla in a skillet for about 30 seconds per side until pliable.
  4. Lay the tortilla flat, add chicken, sautéed veggies, and shredded cheese.
  5. Fold in the sides and roll from the bottom to secure the filling.
  6. For extra crunch, toast the wrapped tortilla in the skillet, seam side down, for 2-3 minutes.
  7. Cut in half and serve with sides like salad or salsa.
