Ingredients
- 1 lb Boneless, skinless chicken breast, cooked and shredded
- 4 Tortillas (flour or whole wheat)
- 2 cups Shredded cheese (cheddar, mozzarella, or a blend)
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves Garlic, minced
- 1 tsp Paprika
- 1 tsp Cumin
- Salt and pepper to taste
- 2 tbsp Olive oil
Instructions
- In a skillet over medium heat, add olive oil. Sauté sliced bell peppers and onion until tender, about 5-7 minutes. Add minced garlic and stir for another minute.
- In a bowl, mix shredded chicken with paprika, cumin, and season with salt.
- Warm each tortilla in a skillet for about 30 seconds per side until pliable.
- Lay the tortilla flat, add chicken, sautéed veggies, and shredded cheese.
- Fold in the sides and roll from the bottom to secure the filling.
- For extra crunch, toast the wrapped tortilla in the skillet, seam side down, for 2-3 minutes.
- Cut in half and serve with sides like salad or salsa.
