Instructions
- In a large mixing bowl, combine pumpkin puree, eggs, milk, sugar, vanilla extract, and spices. Whisk until smooth.
- Preheat a skillet over medium heat and melt a tablespoon of butter.
- Dip each slice of bread into the pumpkin mixture, soaking briefly.
- Cook soaked bread in the skillet for 3-4 minutes on each side until golden brown.
- Serve warm with maple syrup and optional toppings like powdered sugar or sautéed apples.
Notes
You can prepare the pumpkin mixture the night before. Use gluten-free bread for a gluten-free version or swap out pumpkin for mashed bananas for a twist.
