Ingredients
- 4 chicken thighs or breasts
- 1/2 cup balsamic vinegar
- 2 cloves fresh garlic, minced
- 8 oz button mushrooms, sliced
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh parsley, chopped
- 3 tbsp olive oil or butter
- Salt and pepper, to taste
Instructions
- Prep the ingredients by chopping garlic, herbs, and slicing the mushrooms.
- Season the chicken with salt and pepper.
- Heat olive oil or butter in a large skillet over medium-high heat.
- Sear the chicken for about 5-7 minutes until golden brown, then flip and cook for another 5 minutes. Remove and set aside.
- Sauté garlic for 30 seconds, then add mushrooms and cook until browned.
- Pour in balsamic vinegar to deglaze the pan and let it simmer for a minute.
- Return chicken to the pan, spooning the glaze over the top, and add herbs. Let simmer for about 10-15 minutes until the chicken is cooked through.
- Garnish with chopped parsley and serve warm.
Notes
For extra flavor, marinate the chicken in balsamic vinegar, garlic, and herbs for a few hours before cooking.
