A heartwarming dish featuring chicken glazed in balsamic vinegar, garlic, and fresh herbs, all cooked in one pan for simplicity.

Ingredients

  • 4 chicken thighs or breasts
  • 1/2 cup balsamic vinegar
  • 2 cloves fresh garlic, minced
  • 8 oz button mushrooms, sliced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh parsley, chopped
  • 3 tbsp olive oil or butter
  • Salt and pepper, to taste

Instructions

  1. Prep the ingredients by chopping garlic, herbs, and slicing the mushrooms.
  2. Season the chicken with salt and pepper.
  3. Heat olive oil or butter in a large skillet over medium-high heat.
  4. Sear the chicken for about 5-7 minutes until golden brown, then flip and cook for another 5 minutes. Remove and set aside.
  5. Sauté garlic for 30 seconds, then add mushrooms and cook until browned.
  6. Pour in balsamic vinegar to deglaze the pan and let it simmer for a minute.
  7. Return chicken to the pan, spooning the glaze over the top, and add herbs. Let simmer for about 10-15 minutes until the chicken is cooked through.
  8. Garnish with chopped parsley and serve warm.

Notes

For extra flavor, marinate the chicken in balsamic vinegar, garlic, and herbs for a few hours before cooking.
