- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1/2 cup pumpkin puree
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Cream together butter and granulated sugar until light and fluffy.
- Stir in brown sugar and mix until combined.
- Add pumpkin puree and egg, blending until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Drop spoonfuls of dough onto the baking sheet, leaving space between them.
- Bake for 10-12 minutes or until edges are slightly golden, but still soft in the middle.
- Cool on baking sheet for a couple of minutes before transferring to a wire rack.
Notes
For extra flavor, add chocolate chips or chopped nuts and ensure the dough chills for at least 30 minutes in warm kitchens.
