Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup pumpkin puree
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream together butter and granulated sugar until light and fluffy.
  3. Stir in brown sugar and mix until combined.
  4. Add pumpkin puree and egg, blending until smooth.
  5. In another bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
  6. Gradually mix dry ingredients into wet ingredients until just combined.
  7. Drop spoonfuls of dough onto the baking sheet, leaving space between them.
  8. Bake for 10-12 minutes or until edges are slightly golden, but still soft in the middle.
  9. Cool on baking sheet for a couple of minutes before transferring to a wire rack.

Notes

For extra flavor, add chocolate chips or chopped nuts and ensure the dough chills for at least 30 minutes in warm kitchens.
