Ingredients
- 1 cup almond flour
- 1 cup icing sugar
- 3 large egg whites
- 1/2 cup granulated sugar
- 1/2 cup pistachios, finely ground
- 1/2 cup butter, softened
- 1/4 cup cream
- 1 teaspoon vanilla extract
Instructions
- Prep your workspace by cleaning it and gathering all your ingredients. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift together almond flour and icing sugar in a bowl.
- Whip egg whites until foamy, then gradually add granulated sugar and continue to beat until stiff peaks form.
- Fold the dry ingredients into the egg white mixture gently using a spatula.
- Pipe small circles onto prepared baking sheets and let them sit at room temperature for 30-60 minutes.
- Bake for 15-20 minutes until the macarons develop a slight golden hue.
- Let them cool completely before transferring to a wire rack.
- Make the pistachio filling by blending pistachios, then beating with softened butter, cream, and vanilla extract.
- Assemble the macarons by pairing similar sizes and piping the pistachio filling onto half before sandwiching them together.
Notes
Avoid humid days as moisture can ruin the macaron shells. Use a kitchen scale for accurate measurements.
