Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, softened (for cinnamon filling)
  • 2 tablespoons brown sugar (for cinnamon filling)
  • 1 tablespoon ground cinnamon (for cinnamon filling)
  • 4 ounces cream cheese
  • ½ cup powdered sugar
  • Milk (a splash, for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla extract, beating until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until incorporated.
  6. Roll out the dough into a rectangle about ¼ inch thick on a floured surface.
  7. Mix 2 tablespoons of softened butter, 2 tablespoons of brown sugar, and 1 tablespoon of cinnamon; spread this over the dough.
  8. Roll the dough tightly from the long side into a log and slice into 1-inch rounds.
  9. Place rounds on baking sheets and bake for 10-12 minutes until slightly golden.
  10. Prepare the glaze by mixing cream cheese, powdered sugar, and a splash of milk until smooth. Drizzle over cooled cookies.

Notes

For added texture, consider folding in chopped nuts or raisins into the dough. Use parchment paper to prevent sticking.
