- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup butterscotch chips
- 1 teaspoon baking powder
- 1 teaspoon baking soda

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Don’t forget the vanilla extract!
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with the butterscotch chips. Mix until just combined—overmixing can lead to a tough cake.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For an extra crunch, sprinkle additional butterscotch chips on top before baking. Allowing the cake to rest helps the flavors deepen.
