Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Don’t forget the vanilla extract!
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the butterscotch chips. Mix until just combined—overmixing can lead to a tough cake.
  6. Pour the batter into the prepared cake pan, spreading it evenly.
