Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar in a large mixing bowl until light and fluffy.
- Add the vanilla extract, mixing until combined.
- In a separate bowl, whisk together the flour and salt. Gradually add this dry mixture to the butter mixture, blending until the ingredients just come together.
- Fold in the chopped pistachios gently, ensuring they’re evenly distributed.
- Scoop out tablespoons of dough and roll them into small balls. Place them on the prepared baking sheet, leaving space for spreading.
- Bake for 12-15 minutes, or until the edges turn slightly golden.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
- Dust generously with powdered sugar while they’re still warm for that delightful snowball effect.
Notes
Ensure butter is at room temperature for the best texture. If you prefer a less sweet cookie, reduce the sugar slightly in the dough.
