Ingredients
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 3 cups fresh strawberries, hulled and halved
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, beat the softened butter and cream cheese together until creamy and smooth.
- Gradually add the sugar, beating until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the flour mixture to the cream cheese mixture, mixing just until combined. Be careful not to overmix.
- Gently fold in the strawberries until evenly distributed throughout the batter.
- Pour the batter into your prepared baking pan and spread evenly. Bake in the preheated oven for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 20 minutes before transferring it to a wire rack. Serve warm for a gooey texture or chill in the refrigerator for a firmer slice.
Notes
Serve with a dollop of whipped cream or a scoop of vanilla ice cream. Pairs well with herbal teas or sparkling lemonade.
