Ingredients

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 3 cups fresh strawberries, hulled and halved

Instructions

  1. Preheat your oven to 325°F (163°C). Grease and flour a 9×13 inch baking pan.
  2. In a large mixing bowl, beat the softened butter and cream cheese together until creamy and smooth.
  3. Gradually add the sugar, beating until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the flour mixture to the cream cheese mixture, mixing just until combined. Be careful not to overmix.
  6. Gently fold in the strawberries until evenly distributed throughout the batter.
  7. Pour the batter into your prepared baking pan and spread evenly. Bake in the preheated oven for 55-60 minutes or until a toothpick inserted in the center comes out clean.
