- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan.
- In a large bowl, whisk pumpkin puree, granulated sugar, brown sugar, and eggs until smooth.
- In another bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
- Combine the dry mixture into the wet mixture, stirring gently until just combined.
- Transfer the batter into the prepared loaf pan.
- Bake in the oven for 60-70 minutes, checking for doneness with a toothpick.
- Let cool for 10 minutes before transferring to a wire rack.
Notes
For added flavor, sprinkle chopped nuts or chocolate chips on top before baking to add a nice texture.
