- 2 ripe bananas
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- Optional: chocolate chips, walnuts, or dried fruits
Instructions
- Preheat the oven to 350°F (175°C).
- Grease your muffin tin or line it with paper liners.
- Mash the bananas in a large bowl until smooth.
- Add melted butter, eggs, and sugar to the mashed bananas and mix until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture until no flour streaks remain.
- If using, fold in nuts or chocolate chips.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes or until golden and a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Ensure bananas are overripe for maximum sweetness. Avoid overmixing the batter to keep muffins fluffy.
