Ingredients

  • 1 ¾ cups All-purpose flour
  • ¾ cup Unsweetened cocoa powder
  • 1 ½ teaspoons Baking powder
  • ½ teaspoon Salt
  • ½ cup Unsalted butter (softened)
  • 1 ½ cups Sugar
  • 2 large Eggs
  • 2 tablespoons Espresso powder
  • 1 teaspoon Vanilla extract
  • 1 cup Buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. In a separate bowl, mix the buttermilk, espresso powder, and vanilla extract until smooth.
  6. Gradually alternate adding the dry ingredients and the wet mixture to the butter-sugar mix, starting and ending with dry ingredients. Mix until just combined.
  7. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Once cool, frost with your favorite chocolate ganache or cream cheese frosting.

Notes

For added flavor, consider folding in chocolate chips or nuts before baking. Avoid overmixing for a lighter texture.
