Ingredients
- 1 cup pumpkin puree
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup crushed crackers or nuts for coating
Instructions
- In a bowl, mix together the pumpkin puree, softened cream cheese, shredded cheddar, minced garlic, herbs, salt, and pepper until well blended.
- Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes.
- Using your hands, scoop out small portions of the mixture and roll them between your palms to form bite-sized balls.
- Roll each cheese ball in the crushed crackers or nuts until fully covered.
- Place the coated balls back on a tray and chill for an additional 15-20 minutes before serving.
- Arrange them on a festive platter, and enjoy!
