Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- Pinch of salt
- 1 egg
- 1 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Gather all your ingredients on the counter.
- In a mixing bowl, combine flour, baking powder, sugar, and salt. Whisk until blended.
- In another bowl, beat the egg and stir in milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour a tablespoon of batter for each mini pancake onto the griddle. Cook until bubbles form on the surface, about 1-2 minutes, then flip and cook until golden brown.
- Keep pancakes warm in a low oven until all are cooked, then serve with toppings of choice.
Notes
To make vegan pancakes, substitute the egg with flaxseed meal and use plant-based milk. For reduced sugar, try using mashed bananas or applesauce.
