Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Gather all your ingredients on the counter.
  2. In a mixing bowl, combine flour, baking powder, sugar, and salt. Whisk until blended.
  3. In another bowl, beat the egg and stir in milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  6. Pour a tablespoon of batter for each mini pancake onto the griddle. Cook until bubbles form on the surface, about 1-2 minutes, then flip and cook until golden brown.
