Ingredients
- 2 cups Fresh Strawberries, mashed
- 2 cups All-Purpose Flour
- 1.5 cups Granulated Sugar
- 1 cup Unsalted Butter, room temperature
- 3 large Eggs
- 1 cup Milk
- 2 teaspoons Baking Powder
- 2 teaspoons Vanilla Extract
- Pinch of Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and hull about 2 cups of fresh strawberries and mash them gently in a bowl; set aside.
- In a large bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt.
- In a separate bowl, cream 1 cup of room temperature unsalted butter with 1.5 cups of granulated sugar until light and fluffy.
- Incorporate 3 large eggs, one at a time, mixing well after each addition. Stir in 2 teaspoons of vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with 1 cup of milk. Mix just until combined and gently fold in the mashed strawberries.
- Divide the batter evenly between 2 prepared cake pans lined with parchment paper.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Frost with your favorite cream cheese or vanilla frosting and decorate with whole strawberries.
Notes
Using room temperature ingredients results in a better texture. Avoid overmixing to maintain an airy cake.
