Ingredients
- 2 lbs boneless, skinless chicken thighs (or breasts)
- ½ cup hoisin sauce
- ¼ cup soy sauce (or tamari for gluten-free)
- 2 tbsp honey (or brown sugar)
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
- ½ tsp red pepper flakes (optional)
- Green onions, sliced (for garnish)
- Sesame seeds, for garnish
Instructions
- In a small bowl, whisk together hoisin sauce, soy sauce, honey, vinegar, garlic, ginger, sesame oil, and red pepper flakes.
- Place chicken in the slow cooker. Pour sauce over top and stir to coat.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until chicken is tender.
- Shred chicken with two forks, return to sauce, and stir well. Garnish with green onions and sesame seeds.
Notes
For enhanced flavor, consider browning the chicken in a skillet before adding it to the slow cooker. Add fresh vegetables in the last hour of cooking for added freshness.
