Ingredients
- 6 oz semisweet chocolate, chopped
- 2 tbsp brewed espresso (or strong coffee)
- 2 tbsp unsalted butter
- 3 large eggs, separated
- ⅓ cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- Whipped cream & shaved chocolate, for garnish
Instructions
- In a heatproof bowl over simmering water, melt chocolate, espresso, and butter until smooth. Let cool slightly.
- Whisk yolks into cooled chocolate mixture until combined.
- In a separate bowl, beat egg whites until soft peaks form. Gradually add sugar, beating until stiff glossy peaks.
- Beat heavy cream and vanilla until soft peaks form.
- Gently fold egg whites into chocolate mixture, then fold in whipped cream until no streaks remain.
- Spoon mousse into cups or glasses. Chill at least 2 hours. Top with whipped cream and chocolate shavings before serving.
Notes
Ensure chocolate mixture is warm to the touch before folding in the whipped cream and egg whites. Let mousse set in the fridge for optimal texture.
