Ingredients
- 2 cups old-fashioned oats
- 1 teaspoon cinnamon
- 1 pinch salt
- 1 cup diced fresh apples
- 1/2 cup nut butter (almond or peanut butter)
- 1/4 cup honey or maple syrup
- 2 tablespoons flaxseed meal (or 1 egg)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine the oats, cinnamon, and salt.
- In another bowl, mix together the diced apples, nut butter, honey, and flaxseed meal until well combined.
- Gradually fold the wet ingredients into the dry ingredients until evenly combined.
- Pour the mixture into the prepared baking dish and press it down firmly.
- Bake for 25-30 minutes or until the edges are golden brown.
- Allow to cool for 10 minutes before cutting into bars.
- Store in an airtight container in the fridge for up to a week or at room temperature for a couple of days.
Notes
Feel free to substitute apples with pears or other seasonal fruits. For a vegan option, replace the eggs with mashed bananas and flaxseed meal.
