Ingredients

  • 2 cups old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1 cup diced fresh apples
  • 1/2 cup nut butter (almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons flaxseed meal (or 1 egg)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, combine the oats, cinnamon, and salt.
  3. In another bowl, mix together the diced apples, nut butter, honey, and flaxseed meal until well combined.
  4. Gradually fold the wet ingredients into the dry ingredients until evenly combined.
  5. Pour the mixture into the prepared baking dish and press it down firmly.
  6. Bake for 25-30 minutes or until the edges are golden brown.
  7. Allow to cool for 10 minutes before cutting into bars.
  8. Store in an airtight container in the fridge for up to a week or at room temperature for a couple of days.

Notes

Feel free to substitute apples with pears or other seasonal fruits. For a vegan option, replace the eggs with mashed bananas and flaxseed meal.
