Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tablespoons cold water, if necessary
  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 3/4 cup pistachios, shelled and chopped (save some for garnish)
  • 1/4 teaspoon salt
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. In a mixing bowl, whisk together the flour and powdered sugar. Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
  2. Mix in the egg yolk until combined. If the dough is too dry, add cold water, a tablespoon at a time, until it holds together.
  3. Press the dough evenly into the bottom and sides of a 9-inch tart pan. Chill in the refrigerator for 30 minutes.
  4. Preheat your oven to 350°F (175°C). Prick the crust with a fork and bake for 15-20 minutes or until lightly golden. Allow to cool to room temperature.
  5. In a saucepan over low heat, combine the heavy cream and butter. Stir until the butter melts. Add the chopped chocolate and salt, stirring until completely melted and smooth. Remove from heat and stir in the vanilla extract and chopped pistachios.
  6. Pour the chocolate filling into the cooled tart crust, smoothing the top with a spatula and sprinkle with reserved pistachios for garnish.
  7. Refrigerate for at least 2 hours, allowing the filling to set before slicing.

Notes

For an extra touch, consider drizzling melted chocolate or dusting cocoa powder on top before serving. Use high-quality dark chocolate for best results.
