Ingredients
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups peeled and diced apples (Granny Smith or Honeycrisp)
- 1 cup caramel sauce (store-bought or homemade)
- Extra crushed graham crackers for topping (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until crumbly and well combined.
- Press the mixture into the bottom of an 8×8-inch baking dish. Bake for 10 minutes, then let cool slightly.
- In a mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and fold in the diced apples gently.
- Pour the cheesecake filling over the pre-baked crust, spreading it evenly. Bake for 30-35 minutes or until the center is set. Allow to cool to room temperature, then refrigerate for at least 2 hours before slicing.
- Once chilled, drizzle the caramel sauce over the cheesecake bars. Optionally, sprinkle with extra crushed graham crackers.
Notes
To make cutting easier, use a sharp knife and wipe it clean between cuts. For a salted caramel experience, add a pinch of sea salt to the caramel drizzle.
